Description
This blueberry waffle ice cream is a creamy, fruity, and buttery frozen dessert made in just 20 minutes. With real blueberries, crispy waffles, and no ice cream maker required, it’s the perfect summer treat.
Ingredients
2 cups vanilla ice cream (softened)
1 cup blueberries (fresh or frozen)
2 tablespoons sugar
1 teaspoon lemon juice
2–3 waffles (toasted and chopped)
Optional: dash of cinnamon or maple syrup for extra flavor
Instructions
1. In a small saucepan, combine blueberries, sugar, and lemon juice.
2. Simmer over medium heat for 5–7 minutes until mixture thickens into a compote. Let cool.
3. Toast waffles until golden and crisp, then cut into small pieces.
4. In a loaf pan or freezer container, layer softened vanilla ice cream with blueberry compote and waffle pieces.
5. Gently swirl with a spoon to create a ripple effect.
6. Cover tightly and freeze for 2–4 hours until firm.
7. Scoop and serve in cones or bowls.
Notes
• Use dairy-free or coconut ice cream for a vegan version.
• Add chopped nuts, white chocolate chips, or swirl in blueberry jam for variety.
• Gluten-free waffles work great if needed.
